Early in my career I had a boss that was famous for his acquired wisdom. One of his firm rules was that you SLEEP in hotels and EAT in restaurants. What he meant was that restaurants don’t generally make great food. In most cases he was right. But he never ate at the bar at the Marriott Atlanta Alpharetta. But I did tonight. Chef Soto’s Local Mountain Trout Meunière with Risotto is the best fish plate I have eaten in a long life that includes visits to many great restaurants. Apparently this meal is done in a traditional French style and the Chef himself is French. I believe it! I am not good at describing exactly why a dish is so special, but I know it when I have it. I will just say a few things about it: 1) the trout was cut elegantly, served with a perfectly cooked skin side up, and was delicate, but flavorful enough to deserve the risotto on which it was settled. 2) the risotto would have been a fine meal by itself. Oyster mushrooms, spinach and Piment D’esplette (Basque red pepper). Perfect texture and creamy structure. 3) the presentation was beautiful. An almost sizzling black dish with vertical sides, the risotto and then the trout, and then topped with fresh herbs and flower petals. I will attach a picture but it won’t do it full justice because I already took bites before realizing I wanted to photo it, and because my camera isn’t good in low light. The price ($28) could have been more than doubled and it would still be a good value. If you live near Alpharetta you should consider this as a new dining option. If you are staying in this hotel you have no better option. And I also have to mention the cocktails are extremely well made by bartenders who actually care about how happy you are and how much you like their food and drinks. If Joe is bartending, you are extra fortunate. The spirits list is surprisingly extensive and includes hard to find bourbons, ryes and more. Excellent.
